4-Ingredient Balsamic Roasted Mini Peppers
A quick delicious tangy side to go with any main dish. And, healthy-ish to boot!
1.5 lbs bag of MIXED MINI PEPPERS
1 teaspoon of Celtic or Kosher Salt
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
INSTRUCTIONS
1. Heat oven to 425 degrees convection
Place peppers in a 9 X 13-inch pan or something similar, I use two glass pie plates for easy cleanup. Season with salt, olive oil, and balsamic and toss to coat.
2. Cook for 20 min. and serve.
